Balik is the traditional method of smoked salmon preparation with the same technique used at the court of Russian tsars. The recipe, always kept secret, was handed down orally from generation to generation till 25 years ago when it was put into the hands of Balik. From that moment, Balik became the guardian of this ancient tradition. Today, Balik production is located in the Swiss mountains, a pure and uncontaminated surrounding. This is an ideal surrounding where salmons only come into contact with spring waters, salt and the smoke coming from local wood fire, always following the ancient Russian tradition.
