The Catalan tradition of salted cod
Ràfols is a family-run business that has been specialised in the preparation of Traditional Desalted Cod for over 60 years. It is in Iceland that the Atlantic cod – the most highly esteemed among the different species - is fished with hook and line, with little fishing boats, opened butterfly style and salted for 3 months. All Rafols products are prepared from the biggest Codfish pieces, only more than 10 kg in weight. Codfishes are processed using traditional methods. First of all slow hydration, desalting, then portioning, which is done entirely by hand, and finally packaging and freezing. Quality, selection, tradition have been necessary in order to shift from “inland fish” or “the fish for poor people” to one of the most appreciated white fishes.
