Tradition and culture

    Since ancient times, the balsamic vinegar of Modena was a precious dukes and kings heritage, handed down from generation to generation. From time immemorial, it is the symbol of refined cooking and tradition. In 1500, it was already known in Modena, appreciated by the Estensi family and produced in ducal vinegar lofts. The Compagnia del Montale vinegar is highly recommended and it is in the lead among all the vinegars belonging to the same category – thanks to its thick consistency and its tastiness (the so called “rich” taste) – with a sweet and aromatic taste and a very low acidity level.
